Apple soup with celery and carrots is a warm and satisfying lunch that fits the apple diet perfectly. The apple adds natural sweetness, while celery and carrots bring fiber and vitamins. It is light, gentle on the stomach and easy to digest.
Ingredients
2 medium apples
1 celery stalk
1 carrot
1 small onion
500 ml vegetable stock
1/2 tsp ground ginger
Salt and pepper to taste
Instructions
Peel and dice the apples, carrot and onion. Slice the celery.
Saute the onion in a dry non-stick pot for 1-2 minutes with a splash of water.
Add the carrot and celery and cook for another 3 minutes.
Add the apples, ginger and vegetable stock.
Bring to a boil, then simmer for 15-20 minutes until the vegetables are soft.
Blend with an immersion blender until smooth. Season with salt and pepper.
Serve warm, garnished with fresh herbs if you like.
